I'm continually amazed at the specialization of the world we're building. One of my favorite, if obscure, magazines is "Gastronomica: The Journal of Food and Culture". It has academics looking at why we eat what we eat, and how we got here. A little history, a little sociology and travel, a lot of looking at arugala and Indonesian kitchen knives and Jewish cuisine in Idaho. This quarter's issue:

Has a book review by Sandra Oliver, Food Historian, on her gripes and wishes for where food history is and where she would like to see it go. I suspect the same kind of article could be written by a cop about the state of public protection, or a doctor on the state of medicine. Is interesting, though, to see the workings of a mind so embedded in a specific field.
